I request that a “stop/start servers” button is added to Local which will stop or start NGINX when clicked.
Allowing Local’s NGINX server to be stopped will free up ports 80 and 443 for other applications (e.g. Mamp).
These support threads explain why Local’s current behaviour is problematic, and demonstrate that this affects multiple users:

Scratch this feature request. The issue seems specific to High Sierra. In macOS Mojave NGINX starts/ stops when Local starts/stops.
In Bug Sur, Nginx is not stopping automatically. So, it is better to add a button to start/stop servers.

I have the same problem. I have to stop manually stopping Nginx from the task manager
