How can I pull a multisite from WPEngine? I’ve already tried:
Pull website / Create a new site = pulled website is non-multisite
Pull website / Pull to existing = can’t choose existing website (multisite) because it’s marked as incompatible

Right now, Local doesn’t have a way to import Multisites. You’ll need to manually export the site from WP Engine and then manually import the site into and existing Multisite in Local.
The general steps look like what’s outlined in this reply:

The above steps are mostly to convert an existing “regular” site in Local into one that can support Multisite.
Any way you do go about this will involve manual steps, especially to the Database since the urls are changing.
While the above commands do work, I would likely do it slightly differently:
Create a new, blank multisite in Local. This will ensure that the Local server config is correct.
Manually extract the zip backup somewhere, for example on your desktop.
