im aware, that By default, the WordPress REST API has a maximum return limit of 100 items per page and there have to be a way to extend the limit

I’m not aware of anything offhand, but if you look around you’ll likely find other developers who have tried it or shared advice. It may just take a bit of configuring and troubleshooting to narrow down.
