Which server (Nginx or Apache) should i select when setting up a new website if I intend to upload it later to a host like Bluehost on one of its basic hosting plans? are they both compatible and does it make any difference what i select?

WordPress does a good job of running on either Apache or Nginx, so unless you are doing some very deep, specific development, it probably won’t matter which one you select.
I’d mostly recommend just using the Preferred environment in Local since that’s a good balance of stability having the most recent version of those pieces of software.
If you really want to be safe, you can take a look at where you want to host the site and see what software they are using and then try to mimic it with the various versions of software in Local.
