I’m not sure if local installed it - or - if it’s something I installed at one point ages ago, but am I able to remove the PHP-FPM that’s installed via brew and continue to use Local?
I’m guessing yes but I really don’t want to cause any issues. 
You should be okay to remove that!
If something were to become corrupted you could always reinstall Local. Your site files should be safe but you can back them up a couple different ways as a precaution.

Turns out it was installed as a dependency for an Alfred App Workflow, so totally unrelated!
