I would love to have it launch the new Windows Terminal instead of the old conhost.exe one.

Have you tried updating your default Terminal in Local > Preferences > Appearance & behavior > Default apps > Terminal?
Is the new Windows Terminal an option for you?

It appears my wish has come true. My Windows Terminal option was set with that as default. but yesterday it surely launched the conhost version. I’m not sure why. I did get an update for Local installed just before this, or perhaps some special condition yesterday prevented it like launching the site shell immediately after install when Local may have been launched from setup and still running in a slightly different user context/elevated state. In any case I’m happy!
